Cream of green beans (2)
Instructions
Clean and wash the beans.
Chop garlic and onion and saute in oil and butter, add the beans and let them cook for a few minutes.
Pour a quart of broth and cook for about 1 hour.
Let cool then puréed soup and put it back on the heat.
Add a knob of butter and let simmer over low heat a few minutes.
Serve the cream with croutons.

- 350 g of green beans
- 1 onion
- 1 clove of garlic
- Butter
- Olive oil
- 100 cl of vegetable broth
- Salt
- Croutons
