Instructions

Cut asparagus stalks bearing from the tips.

Boil the stems and pass them to the mixer with water, oil, salt and Marjoram.

Dice the potatoes, carrots and asparagus tips, add minced calamari heads, egg, salt and mix well.

Fill the squid with the filling, Cook in a Bain-Marie for 90 minutes and cut into slices, blanch the prawns, seasoning them and arrange them with slices of squid on cream of asparagus.
