Instructions
Shelled egg yolks of the eggs in a saucepan.
In another saucepan, bring to a boil the cream and pour flush on the egg yolks stirring with a whisk.
Heat again without boil.
As soon as the mixture thickens veiling the ladle, retire it and pour into four dishes.
Leave in refrigerator several hours.
Two hours before serving, sprinkle the surface of the cream with the sugar and place under the grill of the oven heated up to the maximum; caramelize.
When the surface is a nice glossy, Brown retired and served warm or or when it is cold.
It is a delicious dessert.
