Porcini mushrooms cream
Instructions
Boil the chicken in two litres of salt water with carrot, celery and onion.
Meanwhile, in half butter flavored mushrooms, sliced, then spray them with brandy and let evaporate, add salt and pepper.
Boneless chicken, cut into the breast fillets and keep aside.
Blend with the rest of the meat broth and 2/3 of the mushrooms.
Add chopped leeks in butter, mix in the flour and diluted with more boiling broth, Cook 10 minutes and add the smoothie.
After about 5 minutes pour the cream.
Garnish the cream on the surface with chicken fillet and mushrooms.
