Mussels au Gratin (Cozze Gratinate)
Instructions
Open the mussels over high heat with the wine, onion, pepper and baking soda.
Drain, remove the empty shells and place them in a baking dish.
Sprinkle with the parsley and chopped garlic, breadcrumbs, salt and pepper.
Drizzle with oil and bake in the oven for a few minutes.

- 1/2 shot of white wine
- Pepper
- 1 sprig of parsley
- 2 cloves of garlic
- 4 tablespoons of olive oil
- Breadcrumbs
- Salt
- 1 pinch of bicarbonate
- 1000 g of mussels
- == 1 finely chopped onion
- 1 teaspoon of wine vinegar
