Cotechino
Instructions
Clean the pork rinds depriving them of the bristles and cut them together with meat and bacon.
Passed all the meat mincer afterwards, in a bowl, add salt, pepper, cloves and nutmeg.
Mix it with white wine.
Take beef tripe, wash it in vinegar and white wine, then dry and rub with salt and pepper and place rolled up in front of the meat grinder.
Now review the dough making it into the gut.
Tie the ends and hang the cotechino in a warm place until it is dry and then wash it in a cooler environment.
After a month it is ready to be baked.
Ingredients and dosing for 4 persons
- 1000 g of pork
- 500 g of bacon
- 500 g of pork rinds
- 1/2 cup of dry white wine
- Climbs
- Cloves
- Nutmeg
- Black pepper
