Instructions
Wash, dry and cut into cubes the eggplants.
Season with salt and leave them to lose water for 1 hour.
Peel the tomatoes, remove seeds and cut into small pieces.
Put the vegetables in a pan with the garlic and oil.
Cook on a high flame and, toward the end of cooking, add salt and add a pinch of sugar and a bit of chopped Basil.
Cut the mozzarella into cubes.
Remove the Pan from the heat, add the mozzarella cheese, stir and serve immediately.

- 3 tomatoes
- 2 eggplant
- 150 g of mozzarella
- 1 clove of garlic
