Fried Rabbit (Coniglio Fritto)
Instructions
Cut the rabbit into small pieces.
Pour a marinade of wine with chopped parsley, garlic and sliced onions, thyme, Bay leaves, pepper, salt and lemon juice and let sit for 2 hours.
Drain the rabbit pieces, Pat dry and pass them in the breadcrumbs.
FRY in abundant boiling oil on low heat.

- 1 rabbit about 1200 g
- Olive oil
- Parsley
- Dry white wine
- 1 lemon
- 2 onions
- 1 clove of garlic
- Thyme
- 1 leaf of laurel
- Breadcrumbs
- Salt
- 4 grains pepper
