Rabbit with Potatoes (Coniglio con Patate)
Instructions
Peel the potatoes and cut them into small pieces.
In a pan put, cold, 5 tablespoons olive oil, bay leaf and Rosemary, when it is hot add the rabbit and grilling it.
Wet with wine and let it evaporate, then add the tomatoes.
Cook covered for about 10 minutes.
Combine the potatoes, add salt and cook covered, over low heat, for another 20-30 minutes.

- 800 g of rabbit apart
- 4 sprigs of rosemary
- 4 leaves of laurel
- 400 g of peeled tomatoes
- White wine
- Olive oil
- 400 g of potatoes
