Shrimp shells
Instructions
Wash the prawns and immerse them in a pot of boiling water in which you put the Bay leaves, thyme, parsley, a pinch of salt and some pepper Speck.
Cook for a few minutes and drain.
Place egg yolks in a bowl of two hard-boiled eggs and spappolateli: Add a pinch of salt, a pepper and paprika; stir with a wooden spoon as if mount mayonnaise, adding a little at a time oil and lemon juice.
When the mixture will look like a rather fluid cream, add the Worcestershire sauce, ketchup, sherry and cream, mixing well.
You will have to obtain a soft and velvety cream.
Four beautiful washed lettuce leaves, place at the bottom of the shells, get over two or three spoonfuls of shrimp and cover them with the sauce already prepared.

- Few drops of worcestershire sauce
- 2 tablespoons of tomato ketchup
- 2 tablespoons of sherry
- 2 tablespoons of cooking cream
- 4 leaves of lettuce salad
