Instructions

Eviscerare keyway and the 12 anchovies.

Arrange them on a plate and cover with the vinegar.

Let marinate for 30 minutes.

Then dry them and chopping.

Divide the chopped anchovies in 4 cups and coat with a mixture of 4 tablespoons fresh grated onion and 2 tablespoons chopped capers in vinegar.

In each Cup pour 1 fresh egg yolk.

Season with salt and pepper.

Garnish with watercress leaves and serve.
