Instructions

Choose small white onions any mold or other signs of deterioration.

Mondatele, peel them and wash them.

Scottatele in a pot with lid, where you have brought to the boil three parts vinegar with one part water, boil them for no less than 4 minutes and drain.

Meanwhile, FRY in a little olive oil, ham fat garlic and onion, everything well chopped.

Add the onions and a little rosolatele.

Sprinkle with sugar, salt and pepper, and cover with a solution of vinegar and water in equal amounts.

Cook over low heat until it becomes a thick sauce, and let boil for 10 minutes.

Pour the hot product in glass jars, freshly washed with warm water and apply immediately the capsules, definitely but without forcing too much.

Turn the pots on a cold surface; only grease after they have passed at least 10 minutes and keep the air cool.
