Tuscan onion soup
Instructions
Cook bone in water flavored with celery, carrot and onion.
When the meat is tender to break away from the bone, gnawed and put only the meat in the pot after turning off the fire.
To sweat the bacon in the oil, add the onions and let them dry; pour 2 ladlefuls of ham and 1 of water and cook over low heat for 30 minutes.
Join the pieces of ham, 2 ladles of broth, 1 water, add salt and cook for 40 minutes.
Have toasted bread dishes and rubbed garlic, pour the onion soup and pepper.

- 1000 g of copperplated onions
- 60 g of pancetta (bacon)
- 6 cl of olive oil
- 1 ham bone
- Black pepper
- Celery
- Carrot
