Pour the water into a saucepan, add sugar, put on the heat, bring to a boil and let it boil slowly until the syrup has reduced by half.
Add the chopped chocolate and let it melt over low heat, stirring with a wooden spatula.
Finally, and stirring constantly, add butter, let it liquefy and blank.
This can be served with chocolate ice creams of various taste or is designated to cover and fill cakes, fill cream puffs.
