Wild boar on a spit
Instructions
Remove the rind of a boar matured for 5-6 days.
Sprinkle with salt, freshly ground pepper and bay leaf finely chopped.
Rub the meat with oil and infilzarla with skewer.
Put it in the oven during cooking ungendola with fat that collects in the drip tray.
Once cooked, served with spicy sauce garnished with lemon wedges.
