Strawberry cheese cake
Instructions
Crumble cookies and mix with butter.
Cover with buttered base dough of a Pie Tin (18 cm diameter) and refrigerate.
Dissolve the gelatin sheet in 2 tablespoons of water.
Mix the cottage cheese, sugar and lemon zest.
Add the jelly and yoghurt.
Place half the strawberries, cut in two, based on cookies.
Leave the cheese mixture over the strawberries, spoon, making cool for three or four hours, until it takes consistency.
Garnish with remaining strawberries and whipped cream.
The cottage cheese is a sour, extremely soft curd; You can replace it with the goat's cheese or with robiola, possibly diluting with little milk if remained too compact.

- 120 g of ginger biscuits
- 450 g of cheese cottage cheese
