Roast of veal wrapped in bacon
Instructions
I take the veal breast and wrap once with the bacon; lego all placing above a branch of Rosemary. You can ask the butcher to prepare it as well.
Put oil and butter in a pan, chill, then Brown the roast with fire quite lively, but not too much. Must not become dark: when is well browned on both sides, add the wine, salt and pepper, then cover and cook for 90 minutes, turning roast occasionally.
A secret: in the sauce add a teaspoon of cornstarch, which thickens with a beautiful color to the sauce.
Finally turn off, let it cool, slice and serve with garnishes as desired.
