Instructions
Mount the egg whites until stiff, gradually combine the icing sugar and blend gently. Combine the almond flour and pinch of cinnamon. Continue to mix gently with a spatula: you will get a thick mixture. Put the dough into a pastry bag and flare shape on a plate, covered with baking paper, making sure to space them properly.
Bake in preheated oven at 180° for 10-15 minutes or until golden brown; the cooking time varies according to the size of the cookies. Let cool "ugly but good" before you remove them from the plaque.
