Fillets of sole baked tasty
Instructions
Take a bowl, put the yolks of the eggs with salt and a generous ground white pepper and whisk well with a whisk. Combine the bread crumbs, herbs and nutmeg. Mixes with whisk to obtain a homogeneous mixture. Wash under cold running water the sole fillets and then arrange them in a buttered baking dish. You melt the rest of the butter and then combine the mixture, stirring constantly.
Lay the pastry on fish fillets. Put in an oven heated to 200 degrees for 15 minutes. Remove from the oven, you anoint with chopped parsley and brings to the table piping hot. Accompanied with salad of radicchio and Belgian salad cut into strips and seasoned with vinaigrette.

- 2 tablespoons chopped parsley

- 150 gr. breadcrumbs
- 1 teaspoon dry tarragon
- 1 teaspoon dried thyme
- 1 small grated nutmeg
