Aromatic macaroons
Instructions
Stir together the finely chopped almonds, chocolate, cocoa powder and coffee and flavourings.
Whip the egg whites until foamy with salt and lemon juice, add sugar and stir for about 2 minutes.
Add the ground almonds.
With a pastry syringe from star-shaped nozzle squeeze the dough to form the macaroons.
Arrange on a baking tray lined with baking paper and cook for about 15 minutes at 160 degrees in the oven already warm.
Tip: you can garnish with amaretti orange peel cropped, previously heated in the syrup.
Ingredients and dosing for 4 persons
- 50 g of almond
- 50 g of plain chocolate
- 1 teaspoon of cocoa powder
- 1 teaspoon of instant coffee powder
- 1 teaspoon of cinnamon and cloves
- 2 egg whites
- 1 pinch of salt
- 1 tablespoon of lemon juice
- 75 g of pectin
- For garnishing:
- 1 orange (zest)
