3_07206 FEW ' SALMON with ASPARAGUS INGREDIENTS for 4 PEOPLE a salmon of approx. 1 Kg, a carrot, a stick of celery, butter or oil, a sprig garnish, 1 teaspoon peppercorns, salt. For the presentation of the dish: boiled asparagus tips, some tomatoes, 2 hard-boiled eggs, a few threads of chives, oil and salt, dill and pepper rose. Clean the carrots and celery, wash them and cut them into pieces, then brown them slightly a little butter or oil and then transfer it to a fish kettle. Add a liter of water, the bouquet garni, peppercorns, salt and bring to a boil. Lower the heat, lay the salmon and cook slowly for 20 minutes; remove from heat and let cool. Shelled eggs, divide them in half and remove yolks, place them in a bowl and coarsely spezzetateli, add the chives, cleaned and chopped, salt and a little oil; mix and spread the mixture in the egg whites. Drain the salmon, remove the skin and place them in a dish of service; put around the tips of asparagus, half-eggs and tomatoes, washed and cut in half. Sprinkle with crushed pink peppercorns coarsely and perfumed with a sprig of dill, a little oil and serve.
