00984 SEAFOOD with BEANS INGREDIENTS for 4 PEOPLE 500 g frozen seafood, 450 g frozen or fresh beans, 150 g shallots, 2 tablespoons basil, 2 tbsp pesto ready, 4 tablespoons of olive oil, the juice of 1/2 lemon, salt, pepper. Cook the beans 4 minutes in salted water. Drain and raffreddatele under running water. Peel them and keep them aside in a bowl. In a large bowl mix the pesto with 3 tablespoons of olive oil and the lemon juice. Add the beans, stir, cover with foil and keep in the refrigerator. In a saucepan, heat the remaining oil and sauté the seafood for 5 minutes, stirring often. Add the scallions, cut into thin slices and continue cooking 1 minute. Pour the seafood on beans, sprinkle with Basil and stir carefully. Add salt and serve warm.
