Black cherries with cream sauce
Instructions
Wash the cherries, stone them, put them in a saucepan with the sugar, lemon juice, a bit of zest, 1 glass of Madeira and 1/2 of water.
Cook them slowly to avoid they fail then drain and continue cooking the syrup to thicken.
Allow to cool in the fridge, separately, sour cherries, syrup and cream.
When serving to divide into 4 bowls the cherries, cover with the syrup (discard the lemon zest) and serve the cream in a pitcher.

- 500 g of black cherries
- 150 g of sugar
- 1/2 lemon
- 1 glass of madeira wine
