Sweet and sour carp
Instructions
Saute in a little butter 1 onion, 1 stick of celery, 1 carrot 1 chopped turnip and together.
Season with salt, pepper, 2 Bay leaves, 1 pinch of thyme, 1 tablespoon grated lemon rind and 2 tablespoons sugar.
Sprinkle with 1/2 cup of vinegar, let it soften and then sprinkle with 1 cup of water.
Let simmer for 5 minutes and pass it through a sieve.
In this sauce to cook for 15 minutes in a pan covered, 1 carp weighing 1200 g cut into 4 slices.
