Kid with peas and eggs
Instructions
Keep the kid to soak in cold water and salt for about half an hour In a large pan put chopped onion, lard and oil and the onion is well browned add the pieces of kid drained and dried.
Add salt and pepper and let it cook very slowly for two or three hours adding occasionally water for easy cooking.
Almost at the end sprinkle with half a glass of white wine and let evaporate.
Yet some continue to Bake until tender add is peas.
Get them seasoning and add the beaten eggs with the Parmesan.
Mix well for a few minutes and serve hot.
Ingredients and dosing for 4 persons
- 1000 g of chopped kid
- 1 onion
- 1/2 tablespoon of lard
- 3 tablespoons of olive oil
- 500 g of fresh peas (or frozen peas)
- 2 whole eggs
- 60 g of grated parmesan cheese
- 1/2 cup of white wine
- Salt
- Pepper
