Anchovies in oil
Instructions
Wash 500 g small anchovies, flour them and fry them in hot oil.
Then drain on absorbent paper, add salt and place well pressed into a bowl.
Meanwhile, in a saucepan boil 1/2 cup of vinegar with 1 cup of water, 2 cloves of garlic, pepper and oregano to taste.
After a few minutes, remove the liquid from the heat and pour it still hot on anchovies.
Let marinate at least 1 day and add, if desired, a sprig of parsley.

- 500 g of small anchovies
- Olive oil
- 1/2 cup of wine vinegar
- 2 cloves of garlic
- Pepper
- Oregano
- 1 sprig of chopped parsley (optional)
