Instructions
Clean and wash the squid, leaving them whole.
Prepare a court bouillon with a quart of salt water mixed with white wine and perfumed with bay leaves.
When the boil lessatevi squid for 20 minutes, drain them and let them cool.
Blanched for a few minutes the shrimp in salted water and let them cool in the liquid.
Drain them, collect them in a large glass bowl, combine garlic and some chopped parsley, the juice of half a lemon, a few rounds of oil spilled, a pinch of pepper and mix well.
Fill with the mixture and arrange on the calamari dish.
Season with an emulsion of olive oil, lemon, parsley chopped fine-filtered, salt and pepper.

- 100 g of olive oil
- 8 squid
- 2 leaves of laurel
- 2 lemons
- 1 clove of garlic
- 50 cl of dry white wine
- Parsley
