Stuffed squid (2) (Calamari Ripieni (2))
Instructions
Pitted olives, capers and chopped water all together with the garlic.
Into the pan with the oil fry the tentacles of squid shredded leaves, and when they are just dry, breadcrumbs and chopped capers and olives; Add the parsley, salt and pepper.
Fill with this mixture the squid and place next to each other in a large baking dish.
Cover with the tomato and oil and let them cook in covered saucepan for about an hour.
Adjust the salt and as usual at the end of cooking add parsley still raw.

- 150 g of olive oil
- 4 cloves of garlic
- 50 g of breadcrumbs
- 100 g of olives of gaeta
- 50 g of capers
- 500 G = = fresh tomato
