Green butter
Instructions
In a pot put four sprigs of spinach, a sprig of parsley, some chervil, cover with water and boil for three minutes.
Drained, wash it under cold water, tritatelo with half a clove of garlic, a tablespoon of capers, three cucumbers, two anchovies, a firm yolk and a cool and let soften butter.
Add salt and pepper.
When the mixture has uniform consistency pass to the knitting mill.
Pour into a bowl with a little olive oil, add a tablespoon of vinegar.
This butter can be smeared on the Canapé or can be served with grilled steaks or boiled fish.
