Orange butter
Instructions
Wash an orange under running water, dry it and grattugiatene the Peel.
Put this in a small saucepan along with the juice of both fruit and sugar and bring everything to a boil.
Let the liquid reduce to about a third of the initial amount, moderate heat.
When finished, remove the juice from the fire, add the mustard, a pinch of salt, a pepper and minced parsley and chopped Basil.
Put in a mixing bowl the butter softened at room temperature, add the orange juice and mix with a wooden spoon until mixture is smooth.
Serve the cold butter in half-empty orange zest.

- 2 oranges
- 1 teaspoon of sugar
- 1 tablespoon of chopped parsley
- 1 teaspoon of chopped basil
- 1 tablespoon of spicy mustard
- Salt
- Pepper
- 125 g of butter
