Get the small medallions from the flesh and pass them in flour, beaten egg and cornmeal; sautee in a pan with a little olive oil.
Blend the turnip with a little oil and blend it with the flour mixture and the remaining eggs, milk, salt and pepper.
Grate spätzle directly into hot water and drain after 3 minutes; turn these in the pan with butter and pre-cooked chestnuts fillets.
