09504 GRATIN CHEESE CROQUETTES 4 PERSONS INGREDIENTS 1/2 l of milk, salt, 50 g semolina, 50 g flour, 150 g grated Grana Padano cheese, an egg, nutmeg, oil seeds, bread crumbs, 1/2 l of béchamel sauce. PROCEDURE pour the milk in a saucepan and add an equal quantity of water and a pinch of salt. Put on the fire and when it will come to the boil pour in rain before the semolina and flour, stirring vigorously with a wooden spoon to prevent lumps from forming. When the mixture will be smooth and dense let it cook for about 10 minutes on very low heat, stirring. Withdrawn from the fire and add the Grana Padano and the egg, mixing well. Season with grated nutmeg. Line a baking sheet with edges of parchment paper and pour the dough prepared levelling with a spatula. When it is cooled cut discs of about 5 cm in diameter. Place the croquettes in a buttered baking dish and drizzle with the sauce. Place in preheated oven and grill.
