Instructions

Let soften butter, put it in a bowl and knock it with a wooden spoon until the mixture is soft and puffy.

Carefully fold the three egg yolks, one at a time, and sugar.

In a small Pan let melt in a Bain-Marie chocolate chopped, gradually add the boiling milk and pour it on the mixture of butter and sugar.

Add the sifted flour and boil the mixture for 5 minutes.

Take the Pan from the heat and let cool, stirring occasionally.

Incorporated to the egg whites very firm.

Generously grease a mould, pour the chocolate cream and cook in a Bain-Marie in the oven, or on the flame, for half an hour or so.

Withdrawn, let cool, gently put the pudding on a serving dish.

You can serve it with a zabaglione sauce or whipped cream.
