Stewed rabbit with mushrooms (Coniglio in umido con funghi)
Instructions
Clean the rabbit, cut into pieces and place them for an hour in a bowl with water and vinegar.
Wash them and dry them with kitchen paper.
Peel the onion and chop finely.
In a Pan fry the onion, add the rabbit pieces and brown them on all sides, add salt and pepper.
Squirt with the Marsala and after 10 minutes, add mushrooms, previously soaked in water, and tomato sauce. Almost finished cooking sprinkle with parsley and garlic finely chopped.

- 1 rabbit
- 1/2 cup of vinegar
- 3 tbsp oil
- a spring onion
- a clove of garlic
- 50 g of dried mushrooms
- 1/2 cup of tomato sauce
- 1/2 cup of marsala wine
- parsley
- salt and pepper
