Instructions

08650 ENDIVE and shrimp SALAD with YOGHURT SAUCE INGREDIENTS for 4 PEOPLE 4 endives, corn 200 g, an avocado, natural yoghurt, 6 tablespoons of olive oil, one tablespoon of mustard, 12 shrimp, salt and pepper wash the prawns, Pat dry with paper towels and season with salt and pepper.

In a large pan, heat a tablespoon of olive oil and sauté the shrimp over high heat.

Separate endive leaves, wash them and dry them.

Keep aside the larger leaves and cut into strips.

Peel avocado and cut into cubes, place in a bowl and add the corn, shrimp, and the strips of Endive, stir and keep aside.

Arrange on the leaves by hand and place in the center of each preparation with the shrimp.

Prepare the sauce emulsifying oil stayed with a pinch of salt, mustard and yogurt until mixture is homogenous.

Serve the salad with salsa aside.
