Instructions

INGREDIENTS for 4 PEOPLE 10 eggs, 100 g of spinach, 100 g of Parmesan cheese, olive oil, salt and pepper to taste, a liter of meat broth Wash spinach well, pour a little water in a saucepan and bring to a boil, Cook the spinach for a few minutes, drain them thoroughly, strizzateli and mince.

Break the eggs into a bowl, add salt and beat them lightly, add the grated cheese and stir.

Divide in half the amount of eggs and put into two separate bowls.

In a bowl, mix spinach, stirring vigorously and add salt and pepper to taste.

Proceed now with the execution of two omelettes: heat in a saucepan 2 tablespoons oil, and pour eggs without the spinach.

Start to cook over medium heat, turning the omelette at least a couple of times.

Cooking requires 5-10 minutes, let it slip on a plate and proceed the same way for the omelette with spinach.

Place the omelets on a cutting board, cut into small cubes and distribute them in individual bowls boil the soup, pour it on cubed omelette and serve immediately.
