Instructions

You can use this Peel to flavor sweets, cutting it into pieces.

The syrup can be used for summer drinks.

Peel a grapefruit to spiral, as if it were an Apple.

You don't need to cut it, you can keep it whole.

The grapefruit has been previously prepared, so that the skin is thoroughly cleaned.

Cover the skin with cold water and set aside for an hour, then change the water and bring to a boil, simmer for about 5 minutes, then drain and let dry.

Boil 800 g of sugar with 2 cups of water (about 500 g) and pour boiling syrup on the Peel; make sure that the skin remains submerged whole, covering it with a sheet of greaseproof paper and pigiandola with a plate.

Let marinate for a whole night.

I1 next day drain the peel and boil the syrup, which is done gradually.

Boil the syrup until it becomes clear, then pour it back on the Peel.

Repeat for three days after this procedure.

On the fourth day let boil the syrup until it will thicken up at this point add the peel and let it boil for about 10 minutes.

Remove from heat and let cool.

Close in glass jars.
