Instructions

WATERCRESS 00593 BAVARIAN INGREDIENTS for 4 PEOPLE 3 avocados, the juice of one lemon, a tablespoon of olive oil, 125 g of white cheese, 200 g semi-oily yogurt 5 gelatin sheets, 15 cl vegetable broth, a pack of watercress over that for decoration.

For garnish: 4 slices of whole wheat bread black, 4 sprigs of cilantro, salt and pepper.

Cut the avocados in half, denocciolateli and moisten with half the lemon juice.

Keep aside a half avocado cut into pieces for the final decoration, cut the rest into a puree and add olive oil.

Mix the cheese with the yogurt until obtaining a homogeneous mixture is smooth, add 1/2 teaspoon of lemon juice, salt and pepper.

Soak the gelatine in cold water.

Boil vegetable broth, drain the gelatine and dissolve it in the broth, then strain it.

Wash and chop the watercress; Add the rest of the lemon juice and the broth and pour this mixture into molds of 6 cm in diameter.

Keep in the refrigerator for 2 hours.

Meanwhile, cut the bread into slices, put each watercress Bavarian on a slice of bread, nappate with one tablespoon of avocado syrup, garnish with a few leaves of watercress, with bits of avocado and sprigs of cilantro.

Serve the fresh Bavarian.
