Blanched almonds in boiling water, then peel them and chop coarsely.
Combine almonds, sugar 150 g flour, pine nuts, grated rind of half a lemon, 2 egg yolks, a spoonful of brandy and a dash of cinnamon: mix well all the ingredients and make a paste roll with a diameter of about 1 cm, then cut it into small pieces as a long fava. Make a dimple in the Center and slightly beaten egg white whisked.
Grease an ovenproof plate and sprinkle with flour advanced; settle the "beans", and put moderately hot oven (160 degrees) for about 30 minutes lasciandovele. Serve cold, with sweet white wine.
