Lemon mousse 2
Instructions
17853 LEMON MOUSSE INGREDIENTS for 4 PEOPLE 2 large lemons untreated, 130 g water, 50 g sugar, 30 egg whites, 1 tablespoon powdered sugar, 400 g of milk, 40 g cornflour.
To serve: 3 tablespoons Orange marmalade, 1 tablespoon Vodka or rum.
Put in a pot with water and lemon peel, cut into tiny strips and boil for about 8 minutes; put aside.
Whip the egg whites until foamy, add a tablespoon of icing sugar and place them aside in the refrigerator.
Mix sugar, cornstarch and milk, Cook for about 7 minutes and let cool; then add the lemon liquid kept aside, the juice of 1/2 lemon and, gently, the egg whites until foamy.
Pour the mousse into individual bowls and serve with ice cold to the jam with the liquor.
