Instructions

2_10144 QUICHE of LEEKS and Zucchini with MINT INGREDIENTS for 4 PEOPLE 250 g flour, 50 g extra virgin olive oil, wine, 50 g of salt.

For the filling: 2 leeks, 1 garlic clove, 4 courgettes, a sprig of mint, 2 eggs, 200 g of fresh cream, 60 g Parmesan cheese, 30 g Virgin olive oil, salt and pepper.

Prepare the dough by mixing all ingredients.

Clean the leeks and zucchini and save everything fillets.

Do Brown the garlic and Mint oil, add leeks and Zucchini, add salt and stew for 10 minutes.

Roll the dough and line a tart mould buttered and dusted with flour, then add the vegetables.

Whisk eggs, cream, parmesan, a pinch of salt and pepper (to taste), pour over vegetables and bake in preheated oven at 180° for 25 minutes.

Serve immediately.
