10212 RADICCHIO TREVISANO QUICHE INGREDIENTS for 4 PEOPLE for the dough: 300 g flour, 200 g ricotta, 1/2 glass of water, salt for the filling: 4 heads radicchio Trevisano, 150 grams of Grana Padano cheese cut into slivers, 60 g of chopped walnuts, 30 g extra virgin olive oil, shallots, salt, a pinch of nutmeg. Peel and wash the radicchio and then divide each tuft in segments. In a terinetta pour the flour, ricotta cheese, a little salt and start to mix the ingredients. Add a little water to soften the dough and continue to work on it until it is smooth and homogeneous. Give it the shape of a stick and put it to rest in the refrigerator for about 30 minutes. Meanwhile, FRY in oil, onion thinly cut and before it browned add the radicchio and leave to stew for a few minutes. Roll out the dough into strips about half inch thick and line with a buttered. Move over Braised radicchio, walnuts and slivers of Grana Padano cheese. Cook in the oven already warm (180°) for about 30 minutes. You can use any scraps of dough to form a grid on the surface.
