Rabbit with brooms

09507 CONIGLIO ALLE GINESTRE 4 PERSONS INGREDIENTS 1 1 rabbit, 3 kg, 1 cup of broth, 1 onion, 3 tablespoons olive oil, 1 tablespoon flour, 1 handful of broom flowers, 2 sprigs of broom, 30 g of raisins, 1/2 glass of white wine and vinegar, 1 teaspoon sugar, oregano, thyme, salt and pepper (s.q.) Procedure in a large saucepan, fry the rabbit pieces into the hot oil.
When they are golden, add the finely chopped onion; Saute for 2 minutes, sprinkle with sugar and sprinkled with vinegar and wine.
Let it evaporate.
Sprinkle with the flour, stir and let it cook a little.
Season with oregano, thyme, crumbled salt and pepper.
Add the raisins and the broom flowers.
Squirt with the broth and cook over a low heat and cover for about an hour.
At the end of the cooking place the rabbit on a platter and garnish with the sprigs of broom before serving.
