Chocolate Beagle (Lepre al cioccolato)
Instructions
Dip the Hare for three hours in wine, with the finely chopped onion, thyme and bay leaf.
Boil the cabbage in boiling salted water and keep it aside.
Put the Hare in a pan with lard and a dash of oil.
When Golden, add the sauce, the grated chocolate and the cornstarch diluted in a little seasoning.
Simmer for an hour.
Place the cabbage leaves in a serving dish, lay over the pieces of Hare, cover with sauce passed through a potato masher and let Cook in the oven at room temperature for 20 minutes.
Serve the dish accompanied with a bottle of the same wine that you used for the sauce.
