09279 RABBIT with FRESH THYME FRIES 4 PERSONS INGREDIENTS 1 young rabbit, 1 glass of dry white wine, 1 sprig of fresh thyme, 3 bay leaves, 1 large onion, extra virgin olive oil, salt and pepper.

CASE Gutted the rabbit, taking away its entrails and gall, then wash it thoroughly and cut it into pieces.

Slice the onion and put it in a pan with plenty of oil, put on the fire and after a few minutes add the rabbit pieces, thyme, bay leaf, salt and pepper.
