Instructions

08430 NIÇOISE SALAD INGREDIENTS for 4 PERSONS 600 g of potatoes, 200 g of green beans, 300 grams of tuna fillets in oil, 100 g pitted green olives, anchovy fillets in oil 4, 1/2 green pepper, 1 stick of celery, 1 small bunch of chives, 3 tablespoons mayonnaise, 3 tablespoons of extra virgin olive oil, 1 tablespoon of vinegar, salt. PROCEDURE Peel the potatoes and cut them into pieces. Put them in a pot with salted water and bring to a boil. Simmer until tender and will drain. Meanwhile Peel the beans and boil them in salted water, scolandole al dente. Put the vegetables still warm in a bowl with chopped tuna, anchovies cut into pieces, chopped olives, chopped celery, bell pepper, sliced thin and shredded chives. Season with salt, mayonnaise, vinegar and olive oil and stir gently. You can also serve apart from a bit of raw red onion thinly sliced.
