BAKED SARDINES with tomato PESTO 2

2_07339 SOLE with CHEESE and Basil SAUCE INGREDIENTS for 4 PEOPLE 4 sole, 4 slices of toasted bread, a pack of cream, 150 ml milk, 100 g of grated Parmesan, 10 basil leaves, lemon zest, olive oil, salt and pepper Wash, dry the basil leaves and chop finely.
In a saucepan pour the milk with the cream, add the Basil and cook for 5 minutes or until the sauce is slightly thickened.
Add the grated cheese, a little zest of one lemon and stir.
Turn off the heat and keep warm.
Wash the soles and dry them with kitchen paper.
Let them Brown in a pan with a little oil, on both sides, gently turned with two tablespoons to avoid breaking them, add salt and pepper.
Place the soles on a serving dish and serve with the warm cheese sauce.
