2_07233 HAKE IN GREEN SAUCE INGREDIENTS for 4 PERSONS 800 g of hake, an onion, a glass of white wine, a nut for fish broth, 2 glasses of water, one tablespoon of cornstarch, garlic, olive oil, wheat flour, a tablespoon of chopped parsley.
Cut the hake steaks, sprinkle with flour and FRY in olive oil on both sides until lightly sautee; keep them aside.
In a saucepan, browned garlic filleted, add chopped onion and wine and allow it to reduce by half.
Dissolve the cornstarch in the water making sure not to form lumps, and pour into the saucepan with the other ingredients, add the parsley.
When it starts to boil, add the hake and cook everything, very gentle heat for 8-10 minutes.
Serve immediately.
