2_07224 SOLE with ALMONDS INGREDIENTS for 4 PEOPLE 500 g sole fillets, butter, 50 g of ground almonds, a carrot, an onion, 2 cloves of garlic, a red pepper, a nut for fish broth, olive oil, salt, water.
Clean and remove the skin on soles; flour them and fry them gently in butter until brown.
Keep them aside in a saucepan at low edges.
Separately, in another saucepan with oil, FRY, very soft focus, garlic, carrot, onion and bell pepper, finely chopped, for 15 minutes, add the ground almonds, the nut and a tablespoon of cornstarch dissolved in a glass of water.
Eventually, puree the mixture until you have a smooth sauce, pour into the casserole with the sole, bring to a boil and serve.
