Imperial salmon slices
Instructions
07904 Salmon SLICES for 4 PERSONS INGREDIENTS IMPERIAL 4 slices of salmon, white wine 100 g, 250 g of broth, onion 30 g, 70 g butter, 2 eggs, 30 g of starch, 1 lemon.
In a large bowl place the slices of salmon topped with chopped parsley and olive oil.
In a saucepan prepare a light soup with parsley, tarragon, onion and salt; Cook for 30 minutes over medium heat with lid.
Strain the cooking broth and put it aside to cool.
Prepare a sauce with egg yolks firm crushed, the lemon juice, potato starch and the softened butter; mix well, add a bit of broth and stir everything together.
Arrange the salmon slices on a baking sheet, pour the prepared sauce and bake for 10 minutes at 180° trimmed with tufts of parsley and serve.
